Bright, colorful, and bursting with fresh herbs — this Mediterranean Turkey Steak with Oven-Roasted Vegetables is the perfect balance between health and flavor. High in lean protein and packed with vitamins, it’s a dish that brings the sunny spirit of the Mediterranean right to your table.

 Ingredients (Serves 2–3)

For the meat:

  • 2–3 turkey steaks (or schnitzels)
  • 2–3 tbsp olive oil
  • 1 sprig of rosemary
  • ½ bunch of thyme
  • 5 sage leaves
  • Freshly ground black pepper

For the vegetables:

Optional: 2 tbsp crème fraîche for serving

2 bell peppers (red & yellow)

1 zucchini

2 red onions

3–4 garlic cloves

6–8 small potatoes

200 g cherry tomatoes

6 tbsp olive oil

Sea salt & black pepper

Fresh herbs (rosemary, thyme, sage) for garnish

Preparation

  1. Prepare the herb oil.
    Wash the rosemary, thyme, and sage, then shake dry. Remove the leaves and needles from 1 sprig of rosemary and half of the thyme. Cut 5 sage leaves into thin strips. Mix the herbs with 2–3 tablespoons of olive oil and a pinch of black pepper.
  2. Marinate the meat.
    Wash and pat dry the turkey steaks. Place them in a bowl, coat with the herb oil, cover, and refrigerate while preparing the vegetables.
  3. Prepare the vegetables.
    Wash and cut the bell peppers into quarters, slice the zucchini into 2 cm rounds, peel the onions and cut into wedges, halve the garlic cloves if large. Peel and halve the potatoes lengthwise.
  4. Season & roast.
    Chop the remaining rosemary and thyme, and pluck the rest of the sage leaves. In a large bowl, mix all the vegetables with the herbs (keep a little thyme for garnish), 6 tablespoons of olive oil, a pinch of salt, and pepper.
    Spread everything evenly on a lightly oiled baking tray. Roast in a preheated oven at 400°F (200°C) (convection: 350°F / 175°C) for 55 minutes, turning once or twice.
  5. Add tomatoes.
    About 10 minutes before the end of cooking, add the cherry tomatoes to the tray and let them roast with the rest.
  6. Cook the turkey.
    Heat a little clarified butter (or olive oil) in a large pan. Remove the turkey steaks from the marinade and fry on medium heat for about 5 minutes, turning once, until golden brown. Season lightly with salt and pepper.
  7. Serve & enjoy.
    Arrange the roasted vegetables and turkey steaks on plates, sprinkle with the reserved thyme, and serve with a spoon of crème fraîche if desired.
